The Holiday Bikini – The Method
WHere is a simplified interpretation of a cocktail featured on a new drinks list. Designed as a party-sized prepared mix which is loaded with the flavours associated with festive period, which makes it ideal for your festive gathering. Reserve the remaining citrus syrup to use in brunch beverages, desserts, or to make another batch of bikinis.
Bikini
Makes enough for 10 people
For the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Put every items inside a pot, bring to a light boil, mixing to dissolve. After that, take off the stove and leave to cool down fully. Decant into an clean bottle, cap it and store in the fridge, where it will keep for about four weeks.
To make Batch Mix: Mix every spirits and syrup in a sizeable container, leave to sit for an hour, then pass it through preferably using muslin, so it's completely strained.
To serve: Measure 85ml from the premix to a stirring glass containing ice, and agitate carefully for about 60 seconds to cool it down. Filter to a chilled martini glass or a similar vessel, decorate with the cranberries and complete it with a brief mist of the essential oil above the glass.
